Deliciously Healthy St. Patrick’s Day Recipes

This weekend is all about the luck of the Irish as we ring in St. Patricks Day. It’s true that eating Irish Soda Bread, corned beef and chasing it with a filling Irish Stout can leave even the healthiest of us with clogged arteries and cholesterol red flags flying. Count your lucky pennies before your eyes with these deliciously healthy St. Patricks Day recipes your friends and family will love you for making.

Healthy Shamrock Chips

  • 1 bag of Spinach Tortilla wraps
  • Salt
  • Cooking Spray

With shamrock cookie cutter, cut out as many shamrocks as possible from tortillas. Place on baking sheet. Spray shamrocks with cooking oil. Sprinkle with salt. Bake at 375 degrees for about 7 – 10 minutes or until the shamrocks have touches of golden crispiness. Serve with hummus or a favorite dip.

Golden Cabbage

  • 1 head of green cabbage
  • 3 TBS extra-virgin olive oil
  • Kosher or Sea salt and ground pepper
  • 1 TSP of Caraway or Fennel Seeds
  • Optional: Bacon Bites

Coat a baking sheet with a tablespoon of extra-virgin olive oil. Cut the head of green cabbage into 1-inch-thick rounds, laying each piece out on another cookie sheet or parchment paper. Brush one side of the cabbage with olive oil. Season with coarse salt and ground pepper and sprinkle with caraway or fennel seeds. Place seasoned side down on coated cookie sheet and repeat coating and seasoning on opposite side of the cabbage. Roast at 400 degrees for 40 to 45 minutes or until cabbage is tender and edges are golden. Optional: Sprinkle tiny pieces of bacon on top of the cabbage as a garnish and for a little added flavor.

Crockpot Guiness Infused Corned Beef

  • 4 cups of water
  • 4 pounds corned beef brisket with spice packet
  • 1 small onion, sliced
  • 1 clove of garlic, chopped
  • 6 ounces of Guinness
  • Optional: 10 red baby potatoes

Place onions and garlic in the bottom of the Crock-Pot. (if including potatoes, add them into crock pot with onion and garlic) Pour in water and place brisket on top. Pour beer over brisket. Sprinkle brisket with spices. Set Crock Pot on high. Cook for 8-9 hours on high.
