Getting your kids to eat healthy can be easy… as long as its colorful and fun! Try our easy and clever spin on the Bento Box lunch, created just in time for back to school. All you need is a standard 7 inch long Tupperware container, silicone cupcake/muffin cups, Popsicle sticks and a little imagination.
Sandwich Sushi: Switch out that unhealthy white bread for flatbread and add your kids favorite lunchtime ingredients (i.e. Peanut butter and Jelly, Turkey and brie cheese with green apple slices). Roll the sandwich up and cut into one inch pieces.
Fruit Kebabs: Cut bite size pieces of melon, berries or whole grapes and stack them along popsicle sticks. Pair the fruit with their favorite yogurt for dipping.
Snack Cups: Fill one or two silicone cupcake cups with high-energy snacks like our no-bake energy bites (recipe below), Veggie Sticks and Cheese or some mixed nuts.
No Bake Energy Bites
Ingredients
- 1 Cup Rolled Oats
- 1 Cup Sweetened Toasted Coconut Flakes
- ½ Cup Ground Flaxseed
- ½ Cup Mini Chocolate Chips or Raisins
- ½ Cup Peanut Butter
- ⅓ Cup Honey
- 1 tsp Vanilla
Instructions
Mix together oats, coconut flakes, flax seed, chocolate chips/raisins. In a separate bowl, stir together peanut butter, honey and vanilla. Drizzle the peanut butter mixture over the oat mixture and stir thoroughly. Chill the mixture for 30 minutes. Roll into bite size balls. Will keep in the refrigerator (in Tupperware) for seven days.
